We needed something different since we were eating 3 meals per day including wild garlic this week. And this black radish was straight from the field + it made best friends with carrots, apples and walnuts.


For 4-6 people; Very simple; 10 min


Ingredients

2 bigger black radishes
2 bigger carrots
1 apple
100 g walnuts

Dressing: pumpkin oil, vinegar and salt

Instructions

  1. Peel black radishes and carrots and grate them. You don’t need to peel the apple – just grate it.
  2. Roast wallnuts in a pan and chop them.
  3. Mix everything in a salad bowl and add dressing to your taste.

Wise-ass corner

You can also use pumpkin seeds instead of walnuts. 

Grated salad without the dressing will last for quite a long time in a plastic container in the fridge.
