Everything is yellow on the grass fields around us. So I went for a walk yesterday and made this old recipe. Dandelion flowers with sugar – that should become dandelion honey in few days.
Never pick dandelion flowers after rain. It should be sunny and in the middle of the day.
Clean the green part off the flowers (best with fingers). You only need the yellow part.
Invite someone to help you. Chat and clean flowers.
Put them in jars in ratio 1:1 (flowers:sugar). As you can see on the photo.
Set them on the sun and wait till the sugar melts. It will take few days.
Strain well trough gauze and store in glass container.
You need 300 g of flowers (only yellow part) and 300 g of brown sugar to fill 2 big glass jars.
