I just came home two days ago and already made a traditional pastel de nata. It is traditional Portuguese pastry you can find everywhere in Portugal and it’s so delicious. It literally means creamy pastry and that is a very un-creative way to describe it but also very true.
This was my first attempt to make it so naturally it needs some more practice but even though they are not that pretty they are absolutely delicious. (confirmed by a lot of family members)


For 24 big pasteis de nata ; Medium difficulty; Time of preparation 45 min


Sestavine

500 g puff pastry dough
1/2 litra milk
1/2 lemon skin
1 cinnamon stick
60 g flour
400 g sugar
250 g water
7 egg yolks

Instructions
  1. Preheat the oven to 250°C.
  2. First roll the dough and make it flat. Then roll it (to be shaped like a cigar). Then cut it in 24 equal pieces. Flatten it into the models as you can see in the video. Set aside.
  3. Mix half of the milk with flour. The rest of the milk bring to boil together with lemon skin and cinnamon. When it starts boiling add the rest of the mixture and mix well for few minutes until it’s very thick.
  4. In another sauce pan add sugar and water. Mix well, bring to boil and let boil for 3 minutes.
  5. Mix in the sugary mixture into the milk and flour mixture.
  6. Place the mixture trough strainer, so there will be no pieces of flour. Mix in the yolk.
  7. With this mixture fill in the cups with dough. Don’t put too much (as I did) because it will go on the tray and make it very difficult to clean.
  8. Bake for 17 minutes.
  9. Eat cooled down.

Try to put dough all the way to the top of the models.

Don’t use too much of the mixture! If you have some left just mix it with some fruits and bake. It will be delicious, trust me.

You can make 24 big ones. I decided to make baby pasteis de nata also so at the end I had 12 big ones and 24 tiny ones.
