These little balls of fluffiness and deliciousness take me way back. They used to wait for me at least once per month for lunch. They were my grandma’s childhood memory and she loved preparing them. She always paired them with onion sauce - usually less alcoholic comparing to the one I made today hehe.
What exactly are gluhi štruklji? It is basically poor man’s food. Leavened dough cooked and steamed in water. The result is super delicious nonetheless.
Onion wine sauce goes with them amazingly. And the simple crumble adds a nice crunch.

For the gluhi štruklji (dough)
Combine all the ingredients together in a bowl. Start kneading the dough on the kitchen counter for about 7 minutes or until it is very soft and elastic. Place the dough ball in a bowl and cover it with a kitchen towel. Let it rest for an hour.
After one hour the dough should have doubled in size. Divide it into 6 parts and roll in hot dog bun-like shapes.
In a pot bring salted water to boil. Place two “buns” into it and cover with a lid. Let them gently simmer for 15 minutes. After that take them out of the water and repeat with the rest.

For the onion sauce
Finely chop the onions. In a pan heat the oil and start sautéing the onions. After 10 minutes add minced garlic, salt and spices. Sauté for few minutes more and add 1 (1/2 cup) dl water. After that start adding wine in intervals (it will take about 20 minutes) and stir occasionally.
At the end add the mixture of the rest of the water and corn starch. Stir and cook for 5 minutes more. Taste and adjust saltiness if needed.

To make the crumble
In a small sauce pan melt the butter. Add breadcrumbs and sauté them for 5 minutes while stirring. They are done when they are golden brown.

Serving
For serving cut the gluhi štruklji (cooked dough) and top them with crumble. Add the sauce and pour yourself a glass of wine. You deserve it!

I wrote that this recipe is for 4 people because 500 g / 4 cups of flour SHOULD be enough. But I have to say it fed 3 people in my family. So maybe make more?
