Aromatic butter form cashews that you can make at home really quickly. And it can serve you on 101 ways.
For 1 cup; Very simple; 15 minutes
Ingredients
200 g cashews
5-6 žlic melted coconut butter
2/3 teaspoon of cinnamon
Pinch of nutmeg
Smaller pinch of salt
1 tablespoon of honey or maple syrup
Instructions
- Roast and stir the cashews in a pan for about 3 minutes or until they become golden brown.
- Put them in a small hand blender and blend for 2 minutes.
- Add all the other ingredients and blend. On this point a lot depends on the type of cashews, power of your hand blender etc. The goal is to get soft butter. That means we need to blend it for at least 5 minutes longer – while doing so turn off the hand blender from time to time and press down the mixture with a spoon and continue with blending.
- When you get the right consistency you store it in a jar.
Wise-ass corner
The butter is good stored in a cold place for a few weeks.
I like to eat it on a toasted bread with some jam. It gives amazing flavour to porridge and desserts too – or simply spread on pieces of fruit.
