Sweet potato is one of my favourite vegetables. Tasty, a bit creamy and you can use it in 100 different ways. Today’s recipe can be used as a snack or side-dish.
For 1 or 2 people; Very easy; 20 minutes
Ingredients
1
sweet potato
1-2 tablespoons of
olive oil
2 tablespoons of
desiccated coconut
1 tablespoon of
honey
(maple syrup for vegan version)
Salt
Instructions
- Cut the sweet potato to slices. Mix it with olive oil and roll in desiccated coconut.
- Bake for around 15 minutes on 200°C. After 15 minutes pour honey over it and broil for few minutes.
- Sprinkle with salt and serve immediately.
Wise-ass corner
Sprinkle chopped peanuts on top for extra crunch.
You can also dip your sweet potato into sour cream or cream cheese.
