Vegan peach crumble is an answer to question What can I easily bake today?. If you do it in deep dish it is even easier. The mix of sweet and sour peachy taste + crinch of crumble is insane. Add some vegetable whipping cream OR EVEN ice-cream and you are on a train to paradise (as the title suggests with ayayay).
For 6 portions; Very simple; 10 min prep + 15-20 min baking
Ingredients
For peaches
8 peaches; pitted and cut to eights
50 g sugar
Juice of 1/2 lemon
For crumble
4 tabespoons coconut oil
100 g wholewheat flour
50 g sugar
80 g roasted almonds
Pinch of salt
Instructions
- Preheat oven on 200ºC.
- Cut peaches. Mix all the ingredients for crumble in a bowl.
- Heat the deep dish and cook peaches with sugar on the highest heat. Stir and wait till peaches start to get soft and slightly fall apart. This should take around two minutes. Remove from heat and add lemon juice.
- Evenly crumble the crumble on peaches and put it in oven. Bake for 15-20 minutes – until the crumble is golden brown.
- When it is baked – cool it down for 10 minutes and serve.
Wise-ass corner
If you don’t have a pan that you can use on a stove and in the oven just cook the peaches in a pan and then bake the whole dish in a baking tray.
I omit using corn starch even though it would make the peaches mixture thicker. If you want to add it mix 2 tablespoons of corn starch with 0,5 dl of water. Mix it well with cooked peaches.
You can also add some grated ginger in the peaches mixture. Did I mention rum? You could definitely add rum!
