My brother’s girlfriend brought us a whole box of pears so I decided to make a delish dessert out of them. I went for brownies and made vegan pear brownies.
Pears really add the nice texture and brownies were approved by all family members. 😁
I went a bit skimpy on sugar since I didn’t want them to be too sweet (first test batch I made literally gave me sugar rush). You can add some more (50 g let’s say) and it shouldn’t change the structure much.

- 1. 
Make the prep for vegan brownies
Start preheating oven to 180°C/356°F.
Mix flaxseeds and water. Let rest for 5 minutes.
Grate the pears.
Line the 22x22cm baking sheet with parchment paper (see down below how I improvised since I don’t have a square pan).

Let's make vegan brownies batter!
In a bowl mix the flaxseeds and water combo, melted butter, sugar, vanilla extract, grated pears and salt. Combine well.
In another bowl mix flour, cocoa powder, baking soda and chocolate drops.
Then start adding dry ingredients to wet ones slowly while mixing everything with a spatula.
At the end mix in the apple cider vinegar.

Let's bake our vegan brownies 🐒
Pour the batter in the baking pan, even it out and add walnuts or coconut drops on the top. Bake for 35 minutes (don’t over-bake it!).
When they are done let them rest for a bit and then cut to squares. And you are all done 🤩

You can substitute pears with apples and zucchinis.
