Well, well, well. What an amazing sandwich
I wanted to share a sandwich recipe with all of you who are preparing meal prep for work or trips. This baby includes all you need to keep you happy and bouncy till your next meal.

I like preparing food alone but it’s even better with friends. This time my kitchen hosted lady called Lucy from New york. I met her a while ago, when she joined our Kucha team.
She is a sandwich fairy and I was able to taste her creations on multiple occasions. Then I came up with an idea that she could develop one sandwich recipe for curryandlove so I can share deliciousness it with you.

ingredients
Marinated radicchio
Cashew cheese

- 1. 
Soak cashew nuts
Soak the cashew nuts in hot water and put aside for a few minutes.

Marinate radicchio
Put salt and apple vinegar on both leafs of radicchio. Stir and put on the side.
- 3. 
Prepare cashew cheese
Rinse cashews that you soaked before.
Blend all the ingredients for the cheese, except cranberries in a smaller food-processor. Blend them until you get a nice thick mixture. If the cheese gets too thick, you can add a spoon or two of water. You can change the amount of spices to suit your taste.
At the end add cranberries to the mixture. Only blend them for a short period so that they wont shred too much. You want them to stay in bigger chunks for a better flavor.

Prepare the rest
Roast walnuts in a pan.
Slice the apple to thin slices.
Toast all the slices of bread in a pan or in a toaster.

Assembling the sandwich
Spread the cashew cheese evenly on all slices.
Put radiccio and apple on two slices of bread.
Put roasted walnuts on the other two slices of bread.
Then put slices together so you end up with two amazing sandwiches.

I suggest you use sour-dough bread as it will add some more deep flavors to the sandwich.
